Founded in December 2015, The Colonial Grill is more than just a food truck—it is a story of heritage, resilience, and the power of family. What started as a vision by William Valbuena, a seasoned kitchen supervisor with deep culinary roots, has evolved into a movement redefining fast food through bold flavors and cultural fusion. After years in the hospitality industry, William found himself at a crossroads. Rather than letting circumstances define his path, he took his passion for cooking and transformed it into something extraordinary: a food truck that blends the comfort of American classics with the vibrant, soulful essence of Afro-Colombian cuisine.

At the heart of our menu is our signature Patacón "Plantain" Burger—a dish that embodies everything we stand for. Premium, freshly ground Angus beef is nestled between crispy tostones instead of traditional brioche buns, then topped with melted American cheese, lettuce, tomato, red onions, and finished with our trio of signature sauces: garlic-cilantro, pineapple, and pink sauce. This creation is more than just a burger; it’s a testament to the ingenuity and rich traditions of our culture.
