Established in December 2015 by William Valbuena, a seasoned kitchen supervisor with a vision, The Colonial Grill began as a dream after William's journey in the hospitality industry took an unexpected turn. Determined to blend American classics with cherished Colombian recipes, William set out to bring his culinary heritage to the streets.
Our signature dish, the Patacon "Plantain" Burger, epitomizes our fusion concept: freshly ground premium Angus beef nestled between tostones instead of traditional brioche buns. This mouthwatering creation is topped with melted American cheese, lettuce, tomato, red onions, and layered with our famous garlic and cilantro sauce, pineapple sauce, and pink sauce—a true testament to our commitment to bold flavors and innovation.
